Do you really think Americans will let a couple bucks a pound stand between them and bacon?  :icon_crazy:

I'm sure I'm not understanding all the economics involved, but if I was a pig producing farm, I would just tell California bye Felicia and sell their portion overseas

California is a big market but then so is China. I suspect over time they will adapt but  certainly short term the bacon bound for CA will wind up elsewhere. When you see it on sale in your non-CA home town buy a bunch and freeze it. That is what will happen at least short term. That or the AZ/NV/OR border towns will have "black market bacon".

This is why Gasoline, electricity and many other staple goods in CA are so much more expensive.

I'm sure it won't take too long for someone to build a California-compliant pig farm, the law was passed in 2018 so they've had three years to plan it and another 6(?) months until it comes into force.

Wow bacon's expensive in California already. Walmart has 12oz for $3.24 (27c per oz) while the equivalent here in the UK has 10oz for £1.25 (US$1.75, 17.5c per oz).

It won't be hard, but it'll be expensive, and most farms aren't running all that much of a margin.  Similar issue to organic farming: the farm has to be organic for three years before it can put on the label, which means three years of non-organic prices (about a third of what they'd get for organic produce or whatever) combined with organic yields (about a third that of non-organic farming).

Imagine if, say, someone mandated you eliminated petrochemicals from your house and you had to foot the bill.  Conceptually easy: just go but an EV or two and some appliances.  The time frame is longer, but the costs are also higher; so either reduced pork products shipped to California, or drastically increased prices.

Many routine commodities (Fuel, electrical power & groceries) in CA are more expensive than next door states.  I agree it is doable but it adds cost to a low margin product. If the cost cannot be passed along in the form of higher prices the pork sellers will sell elsewhere.

Same way I feel about NYC.  NYS has its great areas that I'd love to visit again, and I still have a stake in 40 acres with a cabin and private lake belonging to the family of an ex, but I will never set foot in the state ever again.  The wackos have taken over the government there.

Back to bacon, I've tried turkey bacon, but while some of it is edible, a lot of it tries too hard to be real bacon and fails horribly at it.

I've noted the same with "faux foods".  If they tried to be what they are, they're fine; but start trying to sub them for something else and they fall flat.

What comes to mind is mashed cauliflower (in place of mashed potatoes) and black bean burgers (in place of hamburger patties); both are actually pretty good, but if I ordered mashed taters and got cauliflower I'd be pretty peeved.

It could be the salt content of it.

I've found some turkey bacon is really salty. Even moreso than regular bacon.
